Join us for a 5-course seasonal menu with paired wine, hosted by Chief winemaker & vineyard manager at Shadowfax Wines, Alister Timms .

Alister Timms grew up in his family’s vineyards on the Bellarine Peninsula, planting vines from an early age. Post completing a science degree from Melbourne University, Alister went on to study Oenology at the University of Adelaide and graduated in 2001. A short time later, he began his career at Shadowfax as Assistant Winemaker, a position he held for three years before moving back home to run his family’s winery Kilgour Estate.

In 2008, Alister returned to Shadowfax as vineyard manager & Assistant Winemaker and less than 10 years later, in October 2017 began his role as Chief Winemaker.

Established in 1998, Shadowfax is a boutique winery located in the heart of Werribee Park. With fruit sourced from vineyards in the Macedon Ranges, Werribee & small growers in Geelong, they are renowned for Pinot Noir, Chardonnay, Pinot Gris, Riesling and Shiraz and also produce a selection of highly limited, single-vineyard wines.
